Red curry stir-fried (Pad-Ped-Pad-Prik Gang)

One of my favorite stir-fried/curry dish.  The reason I like this one so much is because I still get the curry taste on the food without having to use the coconut milk.

You can either used red curry or chopped Thai chilli for spice or use both.  I preferred to use both because I like my food really spicy.  But if you can't handle too much spice, I suggest only use the small amount of curry or only a few chopped Thai chilli.

You can choose any meat of your choice in this dish: chicken, pork, beef, prawns, tofu or seafood.


Ingredients:
 *serving 1-2 people*
Pad Ped Chicken
  • 3-4tbsp of cooking oil
  • 1 chicken breast cut in smaller pieces
  • 1 tbsp of Thai  red curry paste
  • 3-5 chopped Thai chilli
  • 3-5 chopped garlic clove
  • 3-5 kaffir lime leaves
  • 1 can bamboo shoots
  • 1/2 green pepper cut in long pieces
  • 1/2 red pepper cut into long pieces
  • 1tbsp fish sauce
  • 1tbsp light soy sauce
  • 1/2 tbsp of oyster sauce (optional)
  • 1/2tbsp of sugar

Let's get started:

Step 1:  Add cooking oil into a frying pan at medium heat.  Wait till the oil is hot, then add the garlic, chilli, curry paste and the kaffir lime leaves.  Mixed and stirred until the curry start to smell really good for about 1-2 minutes.
Step 2:  Add the chicken mixed it with the curry, keep stirring until the chicken is cook. 
Step 3:  Add the bamboo shoots, vegetables and all the sauces.  Mixed it all together and stirred until the vegetable is cook.  Give it a taste to see if the flavor is to your liking.

Step 4:  Served with scented Thai jasmine steam rice.
