*A very popular Thai stir-fried dish with cashew nuts
*This is a quick easy to make stir fry dish
*Ideal to serve with Thai fragrant jasmine rice
*You may use any kind of meat (chicken, pork, tofu, or prawns)
*Can be make into a vegetarian dish, just substitute choice of meat for tofu
*The dish can either be spicy or not spicy depend on your preference

Ingredients:
*serving 2 people*
- 2tbsp cooking oil
- 1 chicken breast (slice into smaller pieces)
- 1 tbsp of fish sauce
- 1 tbsp of light sauce
- 1 tbsp of oyster sauce
- 1/2 tbsp of sambal oelek or chopped Thai chili (optional)
- 1/2tbsp sugar (optional)
- 3-5 clove of garlic (chopped)
- 10-15 cashew cuts
- 1/2 yellow onion (cut into small square)
- 1/2 red pepper (cut into small square)
- 1/2 green pepper (cut into small square)
- 1 celery stick (cut into smaller pieces)
- 1 carrot (cut into smaller pieces)
- 1 spring green onion (optional)
Let's get started:
- Add cooking oil into a wok or a frying pan at medium-high heat, followed by the garlic and the chicken
- Give it a good stirred until the chicken is cook, then add your vegetable, followed by all the sauces, including sugar
- Mixed all the ingredient together in order for the sauce to blend in with the meat and the vegetable, add the green onion and the cashew nuts
- Give it a taste, if it's not flavorful enough or it's not to your liking, you may add some more sauce
- Served with steam rice or steam noodle
